It’s officially ‘Tomato Girl Summer’ and after our trip to Ibiza a few weeks ago, I’ve found a new favourite way of enjoying them! Gazpacho is not only delicious and refreshing on a warm day but also SO full of goodness. Today I’m sharing my Summer Gazpacho Recipe with you all, perfect for using up the tomatoes you may have grown this summer or making the most of abundance in the farmshops. I love to serve this with a fresh loaf of focaccia for a healthy and refreshing lunch.
– 1000g Tomatoes (preferably organic!)
– 50g Peppers
– 40g Onions
– 70g Cucumber
– 1 Clove of Garlic
– 30g Vinegar
– 50-100g Extra Virgin Olive Oil (I love to use Citizens Of Soil – Use code OLIVEJOSIE10 for 10% off)
– 8 Ice Cubes
– Chilli Flakes, Basil and Olive Oil to serve
– Focaccia is optional but I believe this recipe pairs perfectly with a fresh loaf!
1. Chop the tomatoes, peppers, onion, cucumber and garlic and add them to your blender or Thermomix.
2. To the blender add oil, vinegar and ice cubes.
3. Simply blend all the ingredients together until the mixture is smooth.
4. Once ready, pour the gazpacho into your desired jar or straight into bowls to serve.
5. Top with chilli flakes, a drizzle of oil and basil and enjoy! I love to serve this alongside a fresh loaf of focaccia.
