My Summer Gazpacho Recipe – Fashion Mumblr

It’s officially ‘Tomato Girl Summer’ and after our trip to Ibiza a few weeks ago, I’ve found a new favourite way of enjoying them! Gazpacho is not only delicious and refreshing on a warm day but also SO full of goodness. Today I’m sharing my Summer Gazpacho Recipe with you all, perfect for using up the tomatoes you may have grown this summer or making the most of abundance in the farmshops. I love to serve this with a fresh loaf of focaccia for a healthy and refreshing lunch.

 

 

– 1000g Tomatoes (preferably organic!)

– 50g Peppers

– 40g Onions

– 70g Cucumber

– 1 Clove of Garlic

– 30g Vinegar

– 50-100g Extra Virgin Olive Oil (I love to use Citizens Of Soil – Use code OLIVEJOSIE10 for 10% off)

– 8 Ice Cubes

– Chilli Flakes, Basil and Olive Oil to serve

– Focaccia is optional but I believe this recipe pairs perfectly with a fresh loaf!

 

 

1. Chop the tomatoes, peppers, onion, cucumber and garlic and add them to your blender or Thermomix.

2. To the blender add oil, vinegar and ice cubes.

3. Simply blend all the ingredients together until the mixture is smooth. 

4. Once ready, pour the gazpacho into your desired jar or straight into bowls to serve.

5. Top with chilli flakes, a drizzle of oil and basil and enjoy! I love to serve this alongside a fresh loaf of focaccia.

Our Guide To Ibiza – Fashion Mumblr

Ibiza will always have a piece of my heart. It’s where slow mornings, sun-soaked afternoons, and late dinners flow into each other without effort. Here’s our go-to guide – the spots we love, the places we always come back to, and the little moments that make the island magic.

I’d recommend booking all of the below well in advance. As soon as you book your holiday, book the beach clubs and restaurants.

Juntos House

This is our absolute favourite restaurant in Ibiza; a hidden courtyard restaurant serving exceptionally creative and delicious local, seasonal veggie dishes, alongside perfect cuts of meat and fish too. If you love farm to fork dining, this is the best in Ibiza, and still so under-the-radar. Be sure to visit Juntos Farm nearby too, to see where the ingredients are grown, and grab some treats from their farm shop.

La Paloma

This is a very popular spot, with lots of tables nestled within the gardens of a traditional old Finca. Daily specials are presented to you on a giant chalk board; choose from their famous flatbreads, exceptionally prepared fresh seasonal veggie dishes cooked to perfection, and be prepared to share! Ask for a table on the garden terrace, and you’ll need to book a month in advance.

Casa Maca

Casa Maca is famous on the island for exceptional food, great vibes, and an incredible view of the Old Town (this looks extra magical if you visit during a full moon!). You do have to drive through an industrial area on your way in which is slightly odd, but don’t let this put you off! There’s a Huerta (vegetable garden) just to the side of the restaurant (possibly just for show…) and the iconic BBQ grill where meats and veggies are smoked before they arrive on your plate. You MUST order the grilled leek starter (one of my favourite dishes EVER!) and the corn dessert is unusual but really scrumptious too. Be prepared – it’s not cheap here, and will likely cost double any of your other dinners! It is great for celeb spotting though, we were dining next to Calvin Harris the last time we came.

El Silencio

It’s a beach club, but you won’t have your calm afternoon disrupted by pumping loud music at 3pm here – it’s a chilled one (the clue is in the name)! With waiter service at your beach beds, and the loveliest tranquil location, beds here are €40 each (July 2025) which is WAY more affordable than most other beach clubs. Plus the vibes are exceptional if you like a relaxing but want a luxurious afternoon on the beach. The food is wonderful at the restaurant; I thoroughly recommend the Gazpacho and be sure not to miss out on the SENSATIONAL churros at the end!

Atzaró Hotel

We always stay at Atzaró. Beautiful, calm, exceptional food, and in traditional Ibiza finca style. If you appreciate beautiful aesthetics, you’ll fall in love with the charm of this family run hotel. The location is flawless; in the calm and more luxurious north of the island, you’re a short drive from all of the best beaches and restaurants.

TIP: Mention Josie and Charlie upon booking here or at their beach club and you’ll get a treat in your room or on your table!

Aubergine by Atzaró

Owned by the Atzaró group, with most of their veggies coming from the organic Atzaró vegetable garden, your table is tucked away in a lovely garden spot, and you’ll enjoy delicious dishes prepared with an Israeli twist (thanks to Ottolenghi spending time with the chef here). Think pistachio and spices on your aubergine salad and perfectly cooked barbecue meat ~ this is not one to miss!

Beach day at Es Figueral

A local beach with sunbeds and parasols that are actually affordable, it’s a pebbly beach so don’t forget your water shoes, and it’s shallow enough to paddle with children – so a lovely safe place to spend the day. Book lunch at NUDO which is positioned right on the beach; top quality fresh dishes, lots of seafood, and their homemade pasta is 10/10.

Es Fumeral

Located on the popular Cala Nova, Es Fumeral serves elevated vegetable and seafood dishes, as well as seriously delicious chicken croquettas (my favourite!). It’s a beautiful restaurant, with incredible views – and you could pop to the very photogenic Aiyanna for coffee afterwards too.

A day at Atzaró Hotel

You can book a pool cabana at our favourite hotel in Ibiza even if you’re not staying here; come for a day to enjoy the most photogenic and beautiful hotel on the island, and have your jamon, poke bowl (it’s SO good!) or fresh salad delivered straight to your cabana. Your cabana will either be poolside, or a few steps away in their beautiful herb garden. Explore a little further and you’ll find the cold plunge and sauna tucked away behind the rosemary beds!

Atzaró Beach Club

Comfortable big beach beds located on Cala Nova, and a seriously beautiful restaurant above the rocky cove that serves sensational paella, patatas bravas, jamon, and all of your other Spanish favourites. The beach here is great for swimming and paddling, but it gets super busy, so you’ll be grateful that the Atzaró beach beds are just 30 seconds walk across the track away from all the madness!
